🐟🍋 Baked Salmon in Foil with Asparagus & Lemon Garlic Butter
Ingredients (Serves 2–4):

2 salmon fillets (6 oz each, skin-on or skinless)

1 bunch thin asparagus, ends trimmed

2 tbsp butter, melted

2 tbsp olive oil
-
2 garlic cloves, minced
-
Juice of ½ lemon + lemon slices for topping

Zest of ½ lemon
-
Salt & freshly ground black pepper, to taste

1 tsp Italian seasoning or dried parsley

Foil sheets, large enough to wrap each fillet individually
🔧 Instructions:
1. Preheat oven to 400°F (200°C).
2. Prepare the Garlic Lemon Butter:
In a small bowl, mix:

Melted butter

Olive oil
-
Minced garlic
-
Lemon juice & zest
-
Italian seasoning
-
Salt and pepper to taste
3. Assemble the Foil Packets:

Place a salmon fillet in the center of a foil sheet.

Arrange a handful of asparagus spears next to or under the salmon.

Spoon the lemon garlic butter sauce generously over salmon and asparagus.

Top each fillet with 2–3 lemon slices.

Fold the foil over the salmon to seal into a packet, making sure it’s tightly crimped to keep steam in.
4. Bake:

Place foil packets on a baking sheet and bake for 15–18 minutes, depending on salmon thickness.

Open a packet and check: salmon should flake easily with a fork and reach internal temp of 135–145°F.
5. Serve:

Carefully open foil (watch for steam!) and transfer to plates.

Spoon over any buttery sauce from the packet.

Garnish with extra herbs or lemon if desired.
