Ingredients (Serves 2–4):

  • 2 salmon fillets (6 oz each, skin-on or skinless)

  • 1 bunch thin asparagus, ends trimmed

  • 2 tbsp butter, melted

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • Juice of ½ lemon + lemon slices for topping

  • Zest of ½ lemon

  • Salt & freshly ground black pepper, to taste

  • 1 tsp Italian seasoning or dried parsley

  • Foil sheets, large enough to wrap each fillet individually


🔧 Instructions:

1. Preheat oven to 400°F (200°C).

2. Prepare the Garlic Lemon Butter:

In a small bowl, mix:

  • Melted butter

  • Olive oil

  • Minced garlic

  • Lemon juice & zest

  • Italian seasoning

  • Salt and pepper to taste

3. Assemble the Foil Packets:

  • Place a salmon fillet in the center of a foil sheet.

  • Arrange a handful of asparagus spears next to or under the salmon.

  • Spoon the lemon garlic butter sauce generously over salmon and asparagus.

  • Top each fillet with 2–3 lemon slices.

  • Fold the foil over the salmon to seal into a packet, making sure it’s tightly crimped to keep steam in.

4. Bake:

  • Place foil packets on a baking sheet and bake for 15–18 minutes, depending on salmon thickness.

  • Open a packet and check: salmon should flake easily with a fork and reach internal temp of 135–145°F.

5. Serve:

  • Carefully open foil (watch for steam!) and transfer to plates.

  • Spoon over any buttery sauce from the packet.

  • Garnish with extra herbs or lemon if desired.

  • Swap asparagus for green beans or broccolini.
