πŸ“ Ingredients (Serves 2–4):

  • 2 salmon fillets (about 6 oz each, skin-on or off)

  • 1 bunch of asparagus, trimmed

  • 2 tbsp melted butter (or olive oil)

  • 3 cloves garlic, minced

  • 1 lemon (zested + sliced into rounds)

  • 1 tbsp fresh parsley (optional)

  • Salt and pepper, to taste

  • Foil sheets (about 12×18 inches)

  1. Preheat Oven:

    • To 400Β°F (200Β°C).

  2. Make the Garlic Butter Sauce:

    • In a small bowl, mix melted butter, minced garlic, lemon zest, and a squeeze of lemon juice.

    • Season with salt and pepper.

  3. Assemble Foil Packets:

    • Lay out foil sheets.

    • Place asparagus in the center, drizzle lightly with olive oil and season.

    • Place salmon fillets on top of asparagus.

    • Spoon lemon garlic butter sauce over salmon.

    • Top with lemon slices.

  4. Seal Packets:

    • Fold sides of the foil over the salmon, sealing tightly to form a packet (leave some air inside for steaming).

  5. Bake:

    • Place on baking sheet and bake for 15–20 minutes, depending on thickness of salmon.

    • For extra color, broil for 2–3 minutes at the end (open foil first).

  6. Serve:

    • Carefully open foil, garnish with fresh parsley or a squeeze of lemon juice if desired.
