Here’s a delicious, healthy, and easy recipe for Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce. It’s a perfect weeknight dinner that’s ready in about 25–30 minutes with minimal cleanup!


🐟 Baked Salmon in Foil with Asparagus & Lemon Garlic Butter Sauce

🧾 Ingredients:

For each foil packet (serves 1–2):

  • 1 salmon fillet (6–8 oz / 170–225 g), skin on or off

  • 8–10 asparagus spears, trimmed

  • 1–2 tbsp butter, melted

  • 1 garlic clove, minced

  • Juice of ½ lemon + 2–3 lemon slices

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley or dill, chopped (optional)

  • Optional: red pepper flakes, for a bit of heat


🧑‍🍳 Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

2. Prepare Foil Packets:

  • Cut a large piece of aluminum foil per serving (around 12×16 inches).

  • Lay asparagus in the center of each foil sheet. Drizzle with a little olive oil and season with salt and pepper.

  • Place the salmon fillet on top of the asparagus.

3. Make Lemon Garlic Butter:

  • In a small bowl, mix melted butter, minced garlic, lemon juice, and a pinch of salt and pepper.

4. Assemble:

  • Spoon the lemon garlic butter sauce over the salmon.

  • Top with lemon slices and sprinkle with herbs if using.

5. Seal & Bake:

  • Fold the sides of the foil over the salmon to seal into a packet (don’t wrap too tightly—leave a little air inside for steaming).

  • Place foil packets on a baking sheet.

  • Bake for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork (internal temp: 125–130°F / 52–54°C for medium).


🍽️ Serve With:

  • Quinoa, rice, or roasted potatoes

  • A crisp white wine like Sauvignon Blanc or Chardonnay

  • Crusty bread to soak up any sauce


💡 Tips:

  • For extra flavor, marinate salmon for 15–30 minutes in lemon juice, garlic, and herbs before baking.

  • Don’t overbake—the salmon continues to cook slightly after you remove it from the oven.

  • You can also add cherry tomatoes, thin-sliced zucchini, or baby potatoes to the packet.
