Baked Reuben with Layers of Corned Beef, Sauerkraut, and Swiss Cheese

A Baked Reuben with layers of corned beef, sauerkraut, and Swiss cheese is such a delicious twist on the classic sandwich. Here’s a simple, flavorful recipe to make it at home:

Baked Reuben Sandwich

Ingredients:

  • 8 slices rye bread (or your preferred bread)
  • 1 lb corned beef, sliced
  • 1 cup sauerkraut, drained and squeezed dry
  • 8 slices Swiss cheese
  • 1/4 cup Russian dressing or Thousand Island dressing (or more to taste)
  • 2 tbsp butter (for spreading on the bread)

Directions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the bread:
    • Lay out 4 slices of rye bread on a baking sheet. Spread a thin layer of butter on one side of each slice (this will help them get crispy and golden when baking).
  3. Assemble the sandwich:
    • Spread a generous amount of Russian dressing or Thousand Island dressing on the unbuttered side of each slice of bread.
    • Layer on the corned beef, making sure to evenly distribute it.
    • Top with a spoonful of sauerkraut on each sandwich.
    • Add a slice or two of Swiss cheese on top of the sauerkraut.
  4. Top and bake:
    • Place the remaining 4 slices of rye bread on top, buttered side facing outward.
    • Carefully flip each sandwich over so that the buttered sides are on the outside.
    • Bake for 10-15 minutes, flipping the sandwiches halfway through, until the bread is golden brown and the cheese is melted.
  5. Serve:
    • Once baked to your desired crispiness, remove from the oven and cut the sandwiches in half. Serve warm and enjoy the melty, crispy, tangy goodness!

Optional Add-ins:

  • Pickles: Some like to add a slice of dill pickle inside the sandwich for extra crunch and tang.
  • Sautéed onions: Adding a few caramelized onions would give a sweet contrast to the savory flavors.
