Baked Chicken Ricotta Meatballs

Here’s a delicious recipe for Baked Chicken Ricotta Meatballs — tender, flavorful, and perfect with pasta, salad, or as a tasty appetizer!


🍗🧀 Baked Chicken Ricotta Meatballs

Ingredients:

  • 1 lb ground chicken

  • 1/2 cup ricotta cheese

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup breadcrumbs

  • 1 large egg

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • Olive oil spray or drizzle


🔪 Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Mix Ingredients:
    In a large bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, parsley, Italian seasoning, salt, and pepper. Mix until just combined — don’t overwork.

  3. Form Meatballs:
    Scoop about 1 ½ tablespoons of mixture and roll into balls. Place them evenly on the prepared baking sheet.

  4. Bake:
    Lightly spray or drizzle meatballs with olive oil. Bake for 18–20 minutes, or until golden and cooked through (internal temp 165°F/74°C).

  5. Serve:
    Serve hot with marinara sauce over pasta, in subs, or as appetizers with your favorite dipping sauce.


🍽️ Tips:

  • Add finely chopped spinach or grated zucchini for extra veggies.

  • For a crispier crust, broil for 2-3 minutes at the end (watch closely).

  • Freeze uncooked meatballs on a baking sheet, then transfer to a bag for easy meal prep.
