Bacon and Cheese Egg Bites.

Here’s a quick and delicious recipe for Bacon and Cheese Egg Bites — soft, savory, and perfect for meal prep or on-the-go breakfasts. These are similar to the Starbucks-style sous vide egg bites, but much easier to make at home (no fancy tools needed)!


🥓🧀 Bacon and Cheese Egg Bites

🍽️ Makes: 12 mini bites (or 6 muffin-sized)

⏱️ Total Time: ~30 minutes


📋 Ingredients:

  • 6 large eggs

  • 1/4 cup milk or half-and-half (for creaminess)

  • 1/2 cup shredded cheese (cheddar, Swiss, Monterey Jack, or a mix)

  • 4 slices bacon, cooked crisp and crumbled

  • Salt and pepper, to taste

  • Optional add-ins: chopped spinach, diced bell peppers, green onions, or a dash of hot sauce


👩‍🍳 Instructions:

1. Preheat Oven:

  • Preheat to 350°F (175°C).

  • Lightly grease a mini muffin pan or a regular 6-cup muffin tin. You can also use silicone liners for easy release.

2. Cook the Bacon:

  • Cook bacon until crisp, then crumble or chop into small pieces. Set aside.

3. Whisk Eggs:

  • In a bowl, whisk together eggs, milk, salt, and pepper until fully combined and slightly frothy.

4. Assemble:

  • Evenly divide bacon and shredded cheese into each muffin cup.

  • Pour egg mixture over top, filling each cup about 3/4 full.

5. Bake:

  • Bake for 15–18 minutes (mini muffin tin) or 20–25 minutes (regular size), or until egg bites are set and lightly golden on top.

6. Cool & Serve:

  • Let cool for a few minutes before removing from the pan.

  • Serve warm or store for later.


🧊 Storage & Reheating:

  • Fridge: Store in airtight container for up to 4 days

  • Freezer: Freeze up to 2 months; reheat in microwave for 30–60 seconds


🔄 Variations:

  • Keto-friendly: Add heavy cream instead of milk

  • Veggie lovers: Add sautéed mushrooms, onions, or kale

  • Spicy version: Use pepper jack cheese and diced jalapeños
