Ingredients:

  • 2 ripe avocados, peeled, pitted, and diced
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, sliced or chopped
  • 3 large eggs, hard-boiled and sliced
  • 1/4 red onion, thinly sliced (optional)
  • Fresh herbs (e.g., parsley, cilantro, or basil), chopped (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice or vinegar (balsamic or red wine vinegar works well)
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon honey (optional, for a touch of sweetness)

Instructions:

1. Prepare the Hard-Boiled Eggs:

  • Place the eggs in a pot and cover them with cold water.
  • Bring the water to a boil over medium-high heat, then reduce to a simmer and cook for 10-12 minutes.
  • Remove the eggs from the pot, let them cool, and peel the shells. Slice them into rounds or wedges and set aside.

2. Prepare the Vegetables:

  • While the eggs are cooking, dice the avocados, chop the tomatoes, and slice the cucumber.
  • If using red onion, thinly slice it and set it aside. (Soaking the onion in cold water for 5 minutes can help reduce its sharpness.)

3. Make the Dressing:

  • In a small bowl, whisk together the olive oil, lemon juice (or vinegar), Dijon mustard (if using), and honey (if using).
  • Season the dressing with salt and pepper to taste.

4. Assemble the Salad:

  • In a large bowl, gently combine the diced avocado, chopped tomatoes, cucumber, and red onion (if using).
  • Add the hard-boiled egg slices on top.
  • Drizzle the dressing over the salad and toss gently to combine, being careful not to mash the avocado.

5. Serve:

  • Garnish the salad with fresh herbs (like parsley, cilantro, or basil) if desired.
  • Serve immediately as a light meal or side dish.

Tips:

  • For added crunch, you can sprinkle some toasted nuts or seeds (like sunflower seeds or almonds) on top.
