AVOCADO SALAD

Here’s a simple and delicious avocado salad recipe:

Ingredients:

  • 2 ripe avocados, peeled, pitted, and diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime or lemon juice
  • Salt and pepper to taste

Optional Add-ins:

  • Crumbled feta or goat cheese
  • Cooked corn kernels
  • Red bell pepper, diced
  • Jalapeño for a bit of heat

Instructions:

  1. In a large bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, and cilantro or parsley.
  2. Drizzle with olive oil and lime (or lemon) juice, then toss gently to combine.
  3. Season with salt and pepper to taste.
  4. Serve immediately, or chill for a bit before serving to let the flavors marinate.

This refreshing salad is great as a side dish or a light main meal!
