🥑 Avocado Egg & Feta Plate
Ingredients:

1 ripe avocado, halved and sliced

2 large eggs (cooked to your preference: poached, boiled, or fried)

2–3 tablespoons feta cheese, crumbled

1 small tomato or a handful of cherry tomatoes, sliced

1/4 cucumber, sliced

Handful of arugula or mixed greens

1 tablespoon olive oil

1 teaspoon lemon juice or balsamic glaze

Salt and pepper to taste

Optional: red pepper flakes, fresh herbs (parsley, dill), or a slice of whole-grain toast
Instructions:

Cook the Eggs:
Prepare eggs to your liking. Soft-boiled or poached work great for a creamy texture, but hard-boiled or sunny-side-up are also excellent. -
Assemble the Plate:
On a large plate, arrange sliced avocado, eggs, tomatoes, cucumber, and greens. Sprinkle crumbled feta over everything. -
Dress It Up:
Drizzle olive oil and lemon juice (or balsamic) over the plate. Season with salt, pepper, and optional red pepper flakes or herbs. -
Optional Add-ons:
Serve with toast, pita, or a side of hummus for a heartier meal.
