Chicken Cordon Bleu Casserole

Ingredients:

  • 3 cups cooked chicken, shredded or diced (about 2-3 large chicken breasts)
  • 1 1/2 cups cooked ham, diced
  • 1 1/2 cups Swiss cheese, shredded (or Gruyère cheese for a more authentic taste)
  • 1 can (10.5 oz) cream of chicken soup (or homemade if preferred)
  • 1/2 cup sour cream (or Greek yogurt for a lighter version)
  • 1/2 cup milk
  • 1 tsp Dijon mustard (optional, for a tangy kick)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 1/2 cups breadcrumbs (panko for extra crunch)
  • 2 tbsp butter, melted

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Prepare the casserole mixture:
    • In a large mixing bowl, combine the cooked chicken, diced ham, and shredded Swiss cheese. Set aside.
  3. Make the creamy sauce:
    • In a separate bowl, whisk together the cream of chicken soup, sour cream, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper. Make sure the sauce is smooth and well-combined.
  4. Combine the chicken mixture and sauce:
    • Pour the creamy sauce over the chicken, ham, and cheese mixture. Stir gently to combine everything evenly.
  5. Transfer to baking dish:
    • Pour the mixture into the prepared baking dish, spreading it out into an even layer.
  6. Prepare the breadcrumb topping:
    • In a small bowl, mix the breadcrumbs with the melted butter. Stir until the breadcrumbs are coated in the butter, then sprinkle the breadcrumb mixture evenly over the casserole.
  7. Bake:
    • Bake for 30-35 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown and crispy.
  8. Serve:
    • Let the casserole sit for a few minutes before serving. It’s delicious on its own or paired with a side salad, steamed vegetables, or mashed potatoes.

Tips:

  • Chicken: You can use rotisserie chicken for a quicker option, or cook the chicken breasts in advance.
  • Cheese: If you prefer a stronger flavor, you can use a combination of Swiss and Gruyère cheese.
  • Breadcrumbs: For an extra crispy topping, you can use a mixture of panko breadcrumbs and grated Parmesan cheese.
  • Vegetables: You can add vegetables like spinach or peas into the casserole for added color and nutrition.

This Chicken Cordon Bleu Casserole is a rich, comforting dish that’s sure to please everyone at the table! Would you add anything extra, like a different type of cheese or a twist on the sauce?
