Apple Pie Egg Rolls are a fun twist on the classic apple pie, perfect for an easy and portable dessert! These crispy, cinnamon-sugar-coated treats are filled with a sweet apple filling and taste like a bite-sized apple pie. Here’s how to make them:

Apple Pie Egg Rolls Recipe

Ingredients:

For the apple filling:

  • 2 large apples (Granny Smith or Honeycrisp work well), peeled, cored, and diced
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

For the egg rolls:

  • 10 egg roll wrappers (found in the refrigerated section)
  • 1 egg (beaten, for sealing)
  • Vegetable oil (for frying)

For the cinnamon sugar coating:

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Prepare the apple filling:
    • In a medium saucepan, melt the butter over medium heat. Add the diced apples, sugar, cinnamon, and lemon juice. Stir to combine and cook for 5-7 minutes, until the apples are soft but still hold their shape.
    • If you prefer a softer filling, you can cook for a few more minutes until the apples are tender.
    • Once done, remove from heat and let it cool for a few minutes.
  2. Prepare the egg rolls:
    • Lay out the egg roll wrappers on a clean surface. Place about 2 tablespoons of the apple filling in the center of each wrapper. Be careful not to overfill!
    • Brush the edges of the wrapper with the beaten egg to help seal it.
    • Fold the sides of the wrapper over the filling, then roll it up tightly like a burrito, making sure the edges are sealed well. Repeat with the remaining wrappers and filling.
  3. Fry the egg rolls:
    • In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat. The oil is ready when it reaches 350°F (175°C) or when a small piece of bread dropped into the oil turns golden in about 30 seconds.
    • Carefully add the egg rolls to the hot oil, a few at a time, and fry for about 2-3 minutes per side, or until they are golden brown and crispy.
    • Once done, use tongs to remove the egg rolls from the oil and place them on a paper towel-lined plate to drain any excess oil.
  4. Make the cinnamon-sugar coating:
    • In a small bowl, mix together the sugar and cinnamon.
    • While the egg rolls are still warm, roll them in the cinnamon-sugar mixture until evenly coated.
  5. Serve:
    • Serve your Apple Pie Egg Rolls warm with a scoop of vanilla ice cream, a drizzle of caramel sauce, or just on their own as a sweet snack!

Tips:

  • Baked version: For a lighter version, you can brush the egg rolls with a little melted butter and bake them at 400°F (200°C) for about 15-20 minutes, flipping halfway through until golden brown.
  • Apple options: Feel free to use your favorite apples, but tart varieties like Granny Smith or Braeburn hold their shape and have a nice balance with the sweetness of the sugar.
  • Storage: If you have leftovers, store them in an airtight container for up to 2 days. You can also reheat them in the oven for a crispy texture.
