🍏 Classic Apple Pie
🍽️ Servings: 8
⏱️ Time: About 1 hour 30 minutes (plus chilling)
🧂 Ingredients:
For the crust:
-
2 ½ cups all-purpose flour
-
1 tsp salt
-
1 tbsp sugar
-
1 cup (2 sticks) cold unsalted butter, cut into small cubes
-
6–8 tbsp ice water
For the filling:
-
6–7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and thinly sliced
-
¾ cup granulated sugar
-
¼ cup brown sugar, packed
-
1 tsp ground cinnamon
-
¼ tsp ground nutmeg
-
1 tsp vanilla extract
-
2 tbsp all-purpose flour
-
1 tbsp lemon juice
-
1 tbsp unsalted butter, cut into small pieces (for dotting)
For topping:
-
1 egg, beaten (for egg wash)
-
1 tbsp sugar (for sprinkling)
👩🍳 Instructions:
1. Make the crust:
-
In a large bowl, whisk flour, salt, and sugar.
-
Add cold butter cubes and use a pastry cutter or your fingers to blend until mixture resembles coarse crumbs.
-
Gradually add ice water, 1 tbsp at a time, mixing until dough just holds together. Avoid overmixing.
-
Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the filling:
-
In a large bowl, combine sliced apples, sugars, cinnamon, nutmeg, vanilla, flour, and lemon juice. Toss well.
3. Assemble the pie:
-
Preheat oven to 425°F (220°C).
-
On a floured surface, roll out one dough disc into a 12-inch circle and fit into a 9-inch pie dish.
-
Pour apple filling into crust, mounding slightly in the center. Dot with butter pieces.
-
Roll out second dough disc and cover pie. Trim excess dough and crimp edges to seal.
-
Cut slits or create a lattice pattern on top for steam to escape.
-
Brush with beaten egg and sprinkle with sugar.
4. Bake:
-
Bake for 20 minutes at 425°F (220°C).
-
Reduce heat to 350°F (175°C) and bake another 40–50 minutes until crust is golden and filling bubbly.
-
If crust browns too fast, cover edges with foil.
5. Cool & Serve:
-
Cool at least 2 hours before slicing to let filling set.
✅ Tips:
-
Use a mix of tart and sweet apples for best flavor and texture.
-
For a quicker crust, use store-bought pie dough.
-
Serve with vanilla ice cream or whipped cream for extra indulgence.
