Dry Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

Wet Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup sour cream or plain Greek yogurt

  • 2 cups peeled, chopped apples (about 2 medium apples β€” Granny Smith or Honeycrisp work great)

Optional Topping (Crumb or Cinnamon Sugar):

  • Crumb Topping:

    • 1/4 cup brown sugar

    • 2 tbsp flour

    • 1/2 tsp cinnamon

    • 2 tbsp cold butter, cubed

  • OR Simple Cinnamon Sugar:

    • 2 tbsp sugar + 1/2 tsp cinnamon

1. Prep the Oven and Pan:

  • Preheat oven to 350Β°F (175Β°C).

  • Grease and flour an 8-inch square or round baking pan, or line with parchment paper.

2. Mix Dry Ingredients:

  • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. Make the Batter:

  • In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).

  • Beat in eggs one at a time, then mix in vanilla.

  • Stir in sour cream or yogurt.

  • Gradually mix in dry ingredients until just combined.

  • Fold in chopped apples.

4. Assemble and Bake:

  • Pour batter into prepared pan and smooth the top.

  • Add crumb topping or sprinkle with cinnamon sugar, if using.

  • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool and Serve:

  • Let cool in the pan for 10–15 minutes, then transfer to a wire rack.

  • Serve warm or at room temperature β€” plain or with a scoop of vanilla ice cream or drizzle of caramel!
