Apple Cheesecake Tacos are a fun and creative dessert! The crispy taco shells filled with sweet cream cheese and topped with cinnamon apples make for a deliciously unique treat. Here’s how to make them:

Apple Cheesecake Tacos Recipe

Ingredients:

For the Apple Filling:

  • 2 medium apples (Granny Smith or Honeycrisp work well), peeled, cored, and diced
  • 1 tbsp butter
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tsp lemon juice
  • Pinch of salt

For the Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy cream (whipped to stiff peaks)

For the Taco Shells:

  • 4 small flour tortillas (you can also use mini tortillas for bite-sized tacos)
  • 2 tbsp butter (melted)
  • 1/4 cup cinnamon sugar (for dusting)

Instructions:

  1. Make the Apple Filling:
    • In a medium skillet, melt 1 tablespoon of butter over medium heat.
    • Add the diced apples and cook for about 4-5 minutes, stirring occasionally, until they start to soften.
    • Stir in the brown sugar, cinnamon, nutmeg (if using), lemon juice, and a pinch of salt. Cook for another 3-4 minutes until the apples are tender and the mixture is thickened.
    • Remove from heat and let the apples cool slightly.
  2. Make the Cheesecake Filling:
    • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the heavy cream to stiff peaks (you can use a hand mixer or stand mixer for this).
    • Gently fold the whipped cream into the cream cheese mixture until combined. This will give the filling a light, airy texture.
  3. Prepare the Taco Shells:
    • Preheat your oven to 375°F (190°C).
    • Brush the flour tortillas with melted butter on both sides.
    • Fold each tortilla into a taco shape (you can use the oven rack or place them over the edges of an oven-safe pan so they hold their shape while baking).
    • Bake for 8-10 minutes or until the tortillas are golden and crispy. Be careful not to overbake.
    • Once done, remove from the oven and immediately dust them with cinnamon sugar while they’re still warm.
  4. Assemble the Tacos:
    • Fill each taco shell with a generous amount of cheesecake filling, using a spoon or piping bag.
    • Top with the cinnamon apples mixture.
  5. Serve and Enjoy:
    • Optionally, drizzle with caramel sauce, add a dollop of whipped cream, or sprinkle a little extra cinnamon sugar on top.
    • Serve immediately for the best texture and flavor!
