🧅 Amish Onion Fritters
Ingredients:

2 large onions, thinly sliced or diced

3/4 cup all-purpose flour

1 tsp baking powder

1 tbsp sugar

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp paprika (optional)

1/2 cup milk (or buttermilk)

Vegetable oil for frying
Instructions:

Prepare the batter:

In a large bowl, whisk together flour, baking powder, sugar, salt, pepper, and paprika.

Add milk and stir until just combined — the batter should be thick but stirrable.

Add onions:

Stir in the sliced onions, making sure they’re well coated in the batter.

Fry the fritters:

Heat about 1/2 inch of oil in a skillet over medium heat.

Once hot (about 350°F / 175°C), drop spoonfuls of the mixture into the oil.

Flatten slightly and fry 2–3 minutes per side, or until golden brown and crispy.

Drain on paper towels and keep warm in a low oven if needed.

Ingredients:

1/2 cup sour cream (or Greek yogurt)

2 tbsp mayonnaise

2–3 tbsp fresh chives, finely chopped

1 tsp lemon juice or white vinegar

Salt and pepper, to taste

Optional: a pinch of garlic powder

Combine all dip ingredients in a small bowl.

Chill for 15–30 minutes for best flavor.
