1. Make the Batter

In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

In another bowl, whisk eggs, milk, melted butter, and vanilla.

Stir the wet ingredients into the dry until just combined (do not overmix).

Fold in the diced apples.
2. Fry the Fritters

Heat 2–3 inches of oil in a deep pan or fryer to 350°F (175°C).

Drop spoonfuls (about 2 tbsp each) of batter into the hot oil. Fry in batches—don’t overcrowd the pan.

Fry each fritter 2–3 minutes per side, or until golden brown and cooked through.

Remove and drain on paper towels.
3. Glaze

In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
