Here’s a delicious and simple Almond Crusted Chicken recipe — perfect for a healthy and flavorful main dish!


🥘 Almond Crusted Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup raw almonds (or almond meal)

  • 1/2 cup grated Parmesan cheese (optional for extra flavor)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 2 large eggs

  • 2 tbsp Dijon mustard (optional, adds tang)

  • 2 tbsp olive oil or melted butter (for pan frying or drizzling)


Instructions:

  1. Prep Almond Coating:

    • In a food processor, pulse almonds until finely ground (like breadcrumbs, but with a bit of texture).

    • Mix ground almonds with Parmesan cheese (if using), garlic powder, paprika, salt, and pepper in a shallow bowl.

  2. Prepare Egg Wash:

    • In another shallow bowl, whisk together eggs and Dijon mustard.

  3. Coat Chicken:

    • Pound chicken breasts to even thickness.

    • Dip each breast into the egg mixture, then coat thoroughly in the almond mixture, pressing it on to stick well.

  4. Cook:

    • Oven-Baked Method:
      Preheat oven to 400°F (200°C). Place chicken on a lined baking sheet, drizzle lightly with olive oil or melted butter.
      Bake for 20–25 minutes, or until the internal temp reaches 165°F (74°C), flipping once halfway through.

    • Pan-Fried Method:
      Heat 2–3 tbsp olive oil in a skillet over medium heat. Cook chicken for about 4–5 minutes per side, until golden brown and cooked through.


🥗 Serving Ideas:

  • Serve with a lemon wedge, over a fresh arugula salad, or with roasted vegetables.

  • Add a dipping sauce like honey mustard or garlic aioli for extra flavor.
