2 medium russet potatoes (or Yukon Gold)

1–2 tablespoons olive oil (or avocado oil)

🔪 Instructions
1. Prep the Potatoes

Wash and scrub the potatoes well.

Slice very thinly (⅛ inch or less) using a mandoline or sharp knife.
2. Soak the Slices

Place slices in a bowl of cold water for at least 30 minutes (or up to 2 hours). This removes excess starch and helps the chips get crispy.

Drain and pat dry thoroughly with paper towels or a clean kitchen towel.
3. Season and Oil

Toss the dried slices with olive oil and a light sprinkle of salt or seasonings.
4. Air Fry

Preheat air fryer to 360°F (180°C).

Place chips in a single layer in the basket (you may need to do multiple batches).

Cook for 10–15 minutes, shaking halfway, until golden and crispy. Keep a close eye in the last few minutes — they go from perfect to burnt quickly!
5. Cool & Crisp

Remove chips and let cool on a rack or paper towels (they crisp more as they cool).

Add extra salt or seasoning if desired.

Don’t overcrowd the air fryer — it prevents even crisping.

For extra thin chips, slice potatoes almost paper-thin.
