2 cups mashed potatoes (firm, not runny)

1 cup shredded cheese (mozzarella, cheddar, or a mix)

½ tsp garlic powder (optional)

1 egg (for binding)

½ cup breadcrumbs (plus more for coating)
For Breading:

1 egg, beaten

½ cup all-purpose flour

1 cup breadcrumbs (panko works best for crunch)

Optional: pinch of paprika or Italian seasoning in breadcrumbs

1. Make the Filling:

In a bowl, mix mashed potatoes, shredded cheese, herbs, seasonings, 1 egg, and ½ cup breadcrumbs.

Stir until well combined and moldable.
2. Form Balls:

Scoop and roll mixture into 1-inch balls.

Optional: Add a small cube of cheese in the center for an extra gooey center.
3. Bread the Balls:

Roll each ball in flour → dip in beaten egg → coat in breadcrumbs.

For extra crunch, double dip: egg → breadcrumbs again.
4. Air Fry:

Preheat air fryer to 375°F (190°C).

Spray basket with oil. Place balls in a single layer, not touching.

Lightly spray the tops with oil.
