2 cups mashed potatoes (cool and firm)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

2 tbsp cornstarch or all-purpose flour (for binding)

2 tbsp chopped parsley or green onion (optional)

Salt and pepper, to taste

½ tsp garlic powder or paprika (optional for extra flavor)
For Breading:

1 egg, beaten (or milk for a lighter coating)

½ cup breadcrumbs (plain or panko)

Cooking spray or a light brush of oil

1. Prepare the Mixture

In a bowl, mix the mashed potatoes, cheese, flour/cornstarch, herbs, and seasonings.

Take about 1 tbsp of the mixture and roll it into a ball. Repeat until all mixture is used.
2. Bread the Balls

Dip each ball into the beaten egg (or milk), then roll in breadcrumbs to coat evenly.

Optional: chill the balls for 15 minutes for firmer texture before air frying.
3. Air Fry the Balls

Preheat your air fryer to 375°F (190°C).

Lightly spray or brush the potato balls with oil.
