Ingredients:

For the Air Fryer Mushrooms:

  • 1 pound mushrooms (button, cremini, or your favorite variety), cleaned and sliced

  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions:

1. Cook the Mushrooms in the Air Fryer:

  • Preheat the air fryer to 375°F (190°C).
  • In a bowl, toss the sliced mushrooms with olive oil, salt, pepper, garlic powder, and thyme (if using) until evenly coated.
  • Place the mushrooms in the air fryer basket in a single layer. Cook for about 8-10 minutes, shaking the basket halfway through, until the mushrooms are tender and lightly browned. If you like them crispier, cook for a few extra minutes.

2. Make the Scrambled Eggs:

  • While the mushrooms are cooking, crack the eggs into a bowl and whisk them together with the milk or cream, salt, and pepper.
  • Heat a non-stick skillet over medium-low heat and add the butter. Once the butter is melted and slightly bubbling, pour in the eggs.
  • Gently stir the eggs with a spatula, moving them around the pan as they cook. Stir occasionally until they are just set and soft (about 3-4 minutes). Remove from heat while they are still slightly creamy; they will continue cooking in the pan.

3. Serve:

  • Once the mushrooms are done, plate them alongside the scrambled eggs.
  • Garnish with fresh parsley or chives for a burst of color and freshness.

Tips:

  • Mushroom Varieties: You can use any mushrooms you prefer. Cremini, button, or even portobello mushrooms will all work well.
  • Creamier Scrambled Eggs: For even creamier eggs, add a splash of heavy cream instead of milk. You can also cook them over low heat to achieve an extra-soft texture.
  • Add-ins: Feel free to add extras like cheese, spinach, or bell peppers to the scrambled eggs for additional flavor and nutrients.
