Ingredients

2 cups cold mashed potatoes (leftovers work best)

For coating:

1 cup all-purpose flour

2 large eggs, beaten

1 to 1½ cups breadcrumbs (panko or regular)

Instructions
1. Make the filling:

In a large bowl, combine mashed potatoes, cheese, green onions, bacon (if using), garlic powder, salt, and pepper.

Mix well until evenly combined.
2. Form into balls:

Scoop about 1–2 tablespoons of the potato mixture and roll into 1½-inch balls.

Chill in the fridge for 15–30 minutes (optional but helps them hold shape better).
3. Bread the balls:

Set up a breading station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.

Roll each ball in flour, then dip in egg, then coat with breadcrumbs. Press gently to adhere.
4. Air fry:

Preheat your air fryer to 375°F (190°C) for 3–5 minutes.

Lightly spray the potato balls with oil or cooking spray.

Place them in a single layer in the air fryer basket (work in batches if needed).

Air fry for 10–12 minutes, shaking halfway through, until golden brown and crispy.
