🥩 Air Fryer Garlic Butter Steak and Potato Foil Packets

Serves 2–3 | Ready in ~35–40 minutes


Ingredients:

For the foil packets:

  • 1 lb (450g) sirloin or ribeye steak, cut into 1-inch cubes
  • 1½ cups baby potatoes, halved or quartered (Yukon gold or red potatoes)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: chopped fresh parsley or thyme

For the garlic butter:

  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika (optional)
  • 1 tablespoon fresh chopped parsley
  • Juice of ½ lemon (optional, for brightness)

Instructions:

1. Prep the Potatoes:

  • Toss the halved potatoes with olive oil, salt, and pepper.
  • Microwave the potatoes for 3–4 minutes (covered), or boil for 5 minutes to partially cook — this helps them get tender in the air fryer.

2. Make Garlic Butter:

  • In a small bowl, mix melted butter with garlic, Italian seasoning, paprika, and parsley.

3. Assemble the Foil Packets:

  • Tear off two large sheets of heavy-duty foil.
  • Divide the steak cubes and partially cooked potatoes between the packets.
  • Drizzle each packet with the garlic butter and gently toss to coat.
  • Fold the foil tightly into sealed packets (leave space for air to circulate inside).

4. Air Fry:

  • Preheat air fryer to 400°F (200°C).
  • Place foil packets in the air fryer basket (you may need to cook in batches depending on size).
  • Air fry for 16–20 minutes, shaking the basket or flipping the packets halfway through.
  • Check for doneness: steak should be cooked to your liking and potatoes fork-tender.

5. Finish and Serve:

  • Carefully open foil packets (watch for hot steam).
  • Optional: squeeze fresh lemon juice and garnish with parsley.
  • Serve straight from the packet or plate it up!

🔄 Tips & Variations:

  • Add veggies like mushrooms, bell peppers, or green beans for a complete packet.
  • Swap the protein: Use chicken breast or shrimp instead (adjust cook time).
  • Like it spicy? Add red pepper flakes or hot sauce to the garlic butter.
  • Don’t overcrowd the air fryer — space = crispy, evenly cooked food.
