  • 4 medium Yukon Gold or red potatoes (or 2 large russets)

  • 2 tbsp olive oil or melted butter

  • 1/2 tsp onion powder

  • 1/2 tsp paprika (optional, for color)

  • Salt & black pepper to taste

  • Fresh herbs (like rosemary, thyme, or parsley) – optional

  • Foil sheets (8–10 inches wide)

  • Shredded cheese

  • Diced onions or bell peppers

  • Cooked bacon bits or chopped ham

  • A dollop of sour cream or ranch after cooking

  1. Prep the Potatoes

    • Wash and scrub the potatoes. Cut into 1-inch chunks or thick slices.

    • In a bowl, toss with olive oil (or butter), seasonings, and any herbs or extras.

  2. Wrap in Foil

    • Divide the potatoes between 2–4 foil sheets. Fold into sealed pouches, making sure they’re tight but not smashed.

  3. Preheat & Air Fry

    • Preheat air fryer to 400Β°F (200Β°C).

    • Place foil packets in the air fryer basket (leave space around them).

    • Air fry for 25–30 minutes, flipping once halfway through.

  4. Check for Doneness

    • Carefully open one packet and check with a fork β€” potatoes should be soft and lightly golden.

  5. Serve

    • Serve right in the foil or transfer to a plate. Top with sour cream, cheese, green onions, or hot sauce if you like.

  • Want crispier potatoes? Unwrap the foil for the last 5 minutes to get browned edges.
