Scalloped Potato Roll

A Scalloped Potato Roll is a creative twist on traditional scalloped potatoes, transforming them into a rolled dish that can be served as a main or side course. Here’s how you can prepare this dish:

Ingredients:

  • 4 large potatoes (Yukon Gold or Russet work well)
  • 1 medium onion, finely chopped
  • 2 cups heavy cream
  • 2 cups shredded cheddar cheese (or a blend of your favorite cheeses)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon mustard powder (optional)
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Peel and slice the potatoes into very thin rounds (about 1/8 inch thick). A mandolin slicer works best for uniform slices.
  2. Cook the Onions and Garlic:
    • In a skillet, melt the butter over medium heat. Add the chopped onions and cook until they soften and turn golden (about 5-7 minutes). Add the garlic and cook for another 30 seconds, stirring frequently.
  3. Prepare the Cream Sauce:
    • In a saucepan, combine the heavy cream, salt, pepper, thyme, and mustard powder (if using). Heat over low heat until warm, but do not let it boil.
  4. Assemble the Roll:
    • Preheat your oven to 375°F (190°C).
    • Butter a large sheet of parchment paper or a clean surface where you’ll roll the potatoes.
    • Lay out a layer of potato slices, slightly overlapping. Spread a bit of the cooked onions and garlic mixture over the potatoes, followed by a sprinkling of shredded cheese. Continue layering potatoes, onions, and cheese, making sure each layer is thin and even.
  5. Roll and Bake:
    • Carefully roll the potato layers into a log shape, starting from one end. Tuck in the edges as you roll to keep the filling inside.
    • Place the rolled potatoes seam side down in a greased baking dish or on a lined baking sheet.
    • Pour the warm cream mixture over the roll and top with extra cheese.
  6. Bake:
    • Cover with aluminum foil and bake for 35 minutes. Then remove the foil and bake for an additional 10-15 minutes or until the top is golden and the potatoes are tender.
  7. Garnish and Serve:
    • Once baked, let the roll cool for a few minutes before slicing. Garnish with fresh parsley or chives.

This dish is delicious on its own or paired with roasted meats or a salad for a complete meal. Enjoy!
