Here’s a simple and delicious Breakfast Bread recipe that’s perfect for your morning routine! This soft and slightly sweet bread can be enjoyed on its own, toasted with butter, or paired with jam or nut butter.

Breakfast Bread Recipe

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk (or substitute with regular milk)
  • 1 teaspoon vanilla extract
  • 1/2 cup applesauce or mashed banana (for extra moisture)
  • 1/2 cup chopped nuts or dried fruit (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper (9×5-inch size works well).

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using). Set aside.

3. Prepare Wet Ingredients:

  • In a large bowl, cream together the softened butter and sugar using an electric mixer or by hand with a whisk until light and fluffy.
  • Beat in the eggs, one at a time, until well incorporated.
  • Add the buttermilk (or regular milk), vanilla extract, and applesauce (or mashed banana) to the mixture and mix well.

4. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to a denser loaf.
  • If you’re adding chopped nuts or dried fruit, fold them into the batter at this point.

5. Bake the Bread:

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean, and the top is golden brown.

6. Cool and Serve:

  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  • Slice and serve warm or at room temperature with butter, jam, or your favorite spread!

Tips:

  • For a healthier version, you can substitute half of the all-purpose flour with whole wheat flour.
  • Feel free to add in your favorite spices like nutmeg or cardamom for a more aromatic flavor.
  • If you don’t have buttermilk, simply add a tablespoon of lemon juice or vinegar to the milk and let it sit for a few minutes to curdle.
