Chicken Avocado Caprese Salad is a fresh, vibrant, and healthy dish that combines the classic flavors of a Caprese salad with the richness of grilled chicken and creamy avocado. This salad is light yet satisfying, making it perfect for a quick lunch, dinner, or even a side dish at a gathering.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (for cooking the chicken)
  • Salt and pepper, to taste
  • 2 large ripe tomatoes, sliced
  • 1 avocado, sliced
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/4 cup fresh basil leaves, torn or whole
  • 1 tablespoon balsamic glaze (or balsamic vinegar)
  • 1 tablespoon extra-virgin olive oil (for drizzling)
  • Optional: A handful of mixed greens or arugula (for added freshness)

Instructions:

1. Cook the Chicken:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  • Remove the chicken from the pan and let it rest for a few minutes before slicing it thinly.

2. Assemble the Salad:

  • Arrange the sliced tomatoes, avocado, and mozzarella on a large platter or individual plates.
  • Add the fresh basil leaves around the salad for a burst of flavor and color.
  • Optionally, add a handful of mixed greens or arugula for extra texture and freshness.

3. Top with Chicken:

  • Slice the cooked chicken and arrange it on top of the salad.

4. Drizzle with Dressing:

  • Drizzle the salad with balsamic glaze and extra virgin olive oil.
  • Add more salt and pepper to taste, if desired.

5. Serve:

  • Serve immediately, or chill for a few minutes before serving for a refreshing touch.

Tips:

  • Grilled Chicken Option: For a smoky flavor, you can grill the chicken instead of pan-searing it.
  • Lemon Zest: Add a sprinkle of lemon zest on top for a citrusy kick.
  • Marinate the Chicken: For extra flavor, marinate the chicken in olive oil, lemon juice, garlic, and herbs for 30 minutes before cooking.
  • Avocado Tip: To prevent the avocado from browning, squeeze a little lemon or lime juice on it just before serving.
