Here’s a classic Chicken Noodle Soup recipe that’s comforting, hearty, and perfect for chilly days. It’s packed with tender chicken, flavorful broth, and noodles, making it an easy and delicious meal!

Chicken Noodle Soup Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary (optional)
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 2 cups egg noodles or any pasta of your choice
  • 1 tablespoon fresh lemon juice (optional, for brightness)
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Sauté the vegetables:

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion, sliced carrots, and chopped celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften and the onion turns translucent.
  • Add the minced garlic and sauté for another 1-2 minutes, until fragrant.

2. Add the broth and seasonings:

  • Pour in the chicken broth and add the dried thyme, rosemary (if using), bay leaf, salt, and pepper. Stir to combine.
  • Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 10-15 minutes, allowing the flavors to meld.

3. Add the chicken and noodles:

  • Add the cooked, shredded chicken to the soup.
  • Stir in the egg noodles (or your preferred pasta) and cook according to the package instructions, usually about 7-9 minutes, until the noodles are tender.

4. Adjust the seasoning:

  • Taste the soup and adjust the seasoning with more salt, pepper, or a squeeze of fresh lemon juice if desired.

5. Serve:

  • Ladle the soup into bowls and garnish with chopped fresh parsley for added freshness and color.

Tips:

  • You can use bone-in chicken breasts or thighs if you prefer cooking your own chicken; simply simmer them in the broth until cooked through and shred the meat.
  • For a richer broth, you can add a splash of heavy cream or a couple of tablespoons of butter at the end.
  • This soup can be made ahead of time and stores well in the refrigerator for 3-4 days.
