Golden Crispy Chicken with Mushroom Parmesan Sauce

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil (for frying)
  • 1 tablespoon butter (for frying)

For the Mushroom Parmesan Sauce:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth (or white wine)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions:

1. Prepare the Chicken:

  • In a shallow dish, mix the flour with garlic powder, onion powder, paprika, salt, and pepper.
  • In a separate shallow dish, whisk the eggs.
  • In another shallow dish, combine the breadcrumbs and Parmesan cheese.
  • Dredge each chicken breast in the seasoned flour, shaking off any excess. Dip it into the egg mixture, then coat it in the breadcrumb mixture, pressing gently to make sure it sticks.

2. Fry the Chicken:

  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Once hot, add the chicken breasts to the skillet. Cook for 4-6 minutes per side, or until the chicken is golden brown and crispy on the outside and cooked through (the internal temperature should reach 165°F/74°C).
  • Remove the chicken from the skillet and set it aside on a paper towel-lined plate to drain any excess oil.

3. Make the Mushroom Parmesan Sauce:

  • In the same skillet, add the butter and olive oil. Once melted and hot, add the sliced mushrooms and cook for 5-6 minutes, or until they are golden brown and tender.
  • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  • Pour in the chicken broth (or white wine) and let it simmer for 3-4 minutes, scraping up any browned bits from the bottom of the pan.
  • Stir in the heavy cream, Parmesan cheese, and dried thyme (or Italian seasoning). Let the sauce simmer for another 4-5 minutes, or until it thickens to a creamy consistency. Season with salt and pepper to taste.

4. Serve:

  • Place the crispy chicken on plates and spoon the mushroom Parmesan sauce over the top.
  • Garnish with fresh parsley and a sprinkle of extra Parmesan cheese if desired.

Tips:

  • For an extra crispy coating, you can double-dip the chicken in the flour, egg, and breadcrumb mixture.
  • You can add a splash of white wine or lemon juice to the sauce for a touch of acidity.
  • For a lighter version, you can substitute the heavy cream with half-and-half or a lighter cream.
