  • Extra flour for rolling

1. Make the Dough:

  • In a large bowl, combine the flour and salt. Add the oil or melted butter and mix to combine.
  • Gradually add the warm water, a little at a time, stirring until the dough starts to come together. You may need more or less water, so add gradually.
  • Knead the dough on a floured surface for about 5-7 minutes, or until the dough is smooth and elastic. Cover the dough with a damp cloth and let it rest for about 15 minutes.

2. Roll and Cook the Chapati:

  • Divide the dough into 8 equal portions and roll each portion into a ball.
  • Roll each ball into a thin, round disk (about 6-8 inches in diameter) on a floured surface.
  • Heat a cast-iron skillet or non-stick pan over medium-high heat. Once hot, place a chapati in the pan and cook for about 30 seconds, or until bubbles form on the surface. Flip and cook the other side for 30 seconds. Press gently with a clean towel or spatula to puff up the chapati.
  • Remove from the pan and place in a clean kitchen towel to keep warm. Repeat with the remaining dough balls.

  • 1 lb (450g) beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil

  • 1 bell pepper, chopped (optional)

Instructions for Beef Stew:

1. Brown the Beef:

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the beef stew meat in batches, browning each side for about 5-7 minutes. Remove the beef from the pot and set it aside.

2. Sauté the Vegetables:

  • In the same pot, add the chopped onion and cook for 3-4 minutes until softened and translucent.
  • Add the minced garlic and cook for another 30 seconds, until fragrant.

3. Add Spices and Liquids:

  • Stir in the cumin, coriander, paprika, and turmeric (if using). Cook for 1 minute to allow the spices to release their flavors.
  • Add the diced tomatoes, beef broth, and a pinch of salt and pepper. Bring the mixture to a simmer.

4. Simmer the Stew:

  • Return the browned beef to the pot and add the carrots, potatoes, and bell pepper (if using).
  • Cover the pot and let the stew simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.
  • Adjust seasoning with salt and pepper to taste.

5. Serve:

  • Garnish the beef stew with chopped fresh parsley (optional) and serve hot alongside the freshly made chapati.
