Sago Cheese Cookies Recipe


Ingredients:

  • 1 cup (120g) sago (tapioca flour)
  • 1 cup (100g) grated cheese (cheddar, Parmesan, or a mix of both)
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt (adjust based on the saltiness of your cheese)
  • 1 large egg, beaten
  • 2 tablespoons milk (or as needed)
  • 1/4 teaspoon chili flakes (optional, for a slight kick)

Instructions:

1. Prepare the Oven and Baking Sheet:

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2. Mix Dry Ingredients:

  • In a medium-sized bowl, whisk together the sago, baking powder, and salt. Set aside.

3. Cream the Butter and Sugar:

  • In a large bowl, cream the softened butter and sugar using an electric mixer or a whisk until light and fluffy (about 2-3 minutes).

4. Add the Cheese and Egg:

  • Add the grated cheese to the butter and sugar mixture, and mix until well combined.
  • Then, add the beaten egg and mix until fully incorporated.

5. Combine with Dry Ingredients:

  • Gradually add the dry ingredients (sago mixture) to the wet ingredients, mixing with a spatula or your hands until a dough forms.

6. Shape the Cookies:

  • Take small portions of dough and roll them into balls (about 1 inch in diameter). Alternatively, you can roll the dough out on a lightly floured surface and use cookie cutters to make shapes.
  • Place the balls on the prepared baking sheet, spacing them about 1 inch apart. Gently flatten each ball with the back of a spoon or your fingers to form a cookie shape.

7. Bake the Cookies:

  • Bake in the preheated oven for 15-18 minutes or until the edges are golden brown and the cookies are crispy.
  • Keep an eye on them, as baking times can vary depending on the size of the cookies and the cheese used.

8. Cool and Serve:
