Here’s a simple and hearty Chicken and Potato Bake recipe that’s easy to prepare and full of flavor. It’s a comforting, one-pan dish perfect for any night of the week.

Chicken and Potato Bake Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 large potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth or water
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: In a large mixing bowl, toss the potato cubes with 1 tablespoon of olive oil, garlic powder, onion powder, thyme, paprika, salt, and pepper. Make sure the potatoes are evenly coated.
  3. Season the chicken: Season the chicken breasts with salt, pepper, and a sprinkle of paprika. You can also drizzle the remaining tablespoon of olive oil over the chicken for added moisture.
  4. Arrange in the baking dish: In a large baking dish, spread the seasoned potatoes evenly on the bottom. Place the seasoned chicken breasts on top of the potatoes.
  5. Add chicken broth: Pour the chicken broth or water into the baking dish around the chicken and potatoes. This will help keep everything moist as it bakes.
  6. Bake: Cover the baking dish loosely with foil and bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are tender.
  7. Optional step – Add Parmesan: If you’d like, sprinkle the grated Parmesan cheese over the chicken and potatoes during the last 5-10 minutes of baking. This will give the dish a nice golden crust.
  8. Serve: Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley for a burst of color and flavor.

Tips:

  • You can add vegetables like carrots, bell peppers, or zucchini to the bake for extra flavor and nutrients.
  • For a crispy skin on the chicken, remove the foil for the last 10 minutes of baking.
  • Feel free to experiment with your favorite herbs or spices, like rosemary, oregano, or garlic cloves.
