  • Water
  • Salt
  • A pinch of sugar or honey (optional for slight sweetness)
  • Cornmeal (to dust the pan or baking surface, like an English muffin)

Steps:

  1. Feed Your Starter: If you’re using a sourdough starter, make sure it’s active and bubbly. Feed it several hours before baking to ensure it’s at its peak.
  2. Mix the Dough: In a large bowl, combine your active starter, warm water, bread flour, whole wheat flour, and salt. You can also add a little honey or sugar if you want a touch of sweetness. Mix until fully combined and knead for about 8-10 minutes until smooth and elastic.
  3. First Rise: Let the dough rise in a warm, draft-free area for about 4-6 hours, or until doubled in size.
  4. Shape the Dough: Once risen, gently deflate the dough and shape it into a round loaf, like the shape of an English muffin but larger. You can also shape it into a square or oval, depending on your preference.
  5. Second Rise: Let the dough rest for about 1-2 hours, allowing it to rise again slightly.
  6. Bake: Preheat your oven to 400°F (200°C). If you have a baking stone or Dutch oven, use it for a better rise and crust. Dust the surface of your loaf with cornmeal to mimic the texture of an English muffin. Bake for 30-35 minutes, until the loaf has a golden-brown crust and sounds hollow when tapped on the bottom.
  7. Cool: Let it cool completely before slicing to keep the texture from becoming too dense or gummy.

This loaf should give you the tangy flavor of sourdough with a slightly softer, English muffin-inspired crumb inside. Enjoy toasted with butter or your favorite toppings!
