Ingredients:

  • 2 chicken breasts (boneless, skinless), cut into strips or bite-sized pieces
  • 1 tablespoon olive oil (or vegetable oil)
  • 1 small onion, sliced
  • 2 cups mushrooms (button, cremini, or a mix), sliced
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth or water
  • 1 tablespoon soy sauce (optional, for added depth of flavor)
  • 1 tablespoon cornstarch (optional, to thicken the sauce)
  • 1-2 teaspoons freshly ground black pepper (adjust to taste)
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon butter (optional, for richness)
  • Fresh parsley or green onions for garnish (optional)

Instructions:

1. Prepare the Chicken:

  • Season the chicken pieces with a pinch of salt and black pepper. Set aside.

2. Cook the Chicken:

  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces to the skillet and cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown on the outside.
  • Once cooked, remove the chicken from the skillet and set it aside.

3. Sauté the Mushrooms and Onions:

  • In the same skillet, add a little more oil if necessary, then add the sliced onions. Sauté for about 2-3 minutes, until they start to soften.
  • Add the sliced mushrooms and cook for another 4-5 minutes, stirring occasionally, until they release their moisture and become tender.

4. Add Garlic and Seasoning:

  • Add the minced garlic to the skillet with the mushrooms and onions. Cook for about 30 seconds, until fragrant.
  • Stir in the freshly ground black pepper and salt, adjusting to your taste.

5. Make the Sauce:

  • Add the chicken broth (and soy sauce, if using) to the skillet. Stir well to combine.
  • If you’d like a thicker sauce, mix the cornstarch with a tablespoon of cold water and stir it into the skillet. Cook for another 2-3 minutes until the sauce thickens slightly.

6. Combine the Chicken:

  • Return the cooked chicken to the skillet with the mushrooms and onions. Stir to combine everything, coating the chicken in the sauce. Let it simmer for an additional 2-3 minutes to warm through and allow the flavors to meld together.

7. Finish and Serve:

  • Optional: Stir in 1 tablespoon of butter for extra richness.
  • Taste and adjust seasoning with more black pepper or salt, if needed.
  • Garnish with fresh parsley or chopped green onions if desired.
