Sausage Muffins are a delicious, savory breakfast or brunch option that’s perfect for the whole family. These muffins are packed with crumbled sausage, cheese, and herbs, and they’re easy to make ahead for a quick, hearty meal. Here’s an easy recipe for making Sausage Muffins:

Ingredients:

  • 1 lb (450g) breakfast sausage (mild or spicy, depending on preference)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper muffin liners.
  2. Cook the Sausage:
    • In a skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula, until it’s fully cooked and browned (about 5-7 minutes). Drain any excess fat and set aside to cool.
  3. Prepare the Muffin Batter:
    • In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and onion powder.
    • In another bowl, whisk together the milk, eggs, and melted butter until smooth.
    • Add the cooked sausage (after it has cooled) to the dry ingredients and mix well.
    • Pour the wet ingredients into the dry ingredients and gently stir until combined. Add the shredded cheese and mix just until everything is incorporated.
  4. Fill the Muffin Tin:
    • Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake:
    • Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few crumbs.
    • If you like a golden top, you can broil the muffins for an additional 1-2 minutes at the end, but keep a close eye on them to prevent burning.
  6. Serve:
    • Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool slightly.
    • Garnish with fresh parsley (if using) and serve warm.

Tips:

  • Cheese options: You can use any cheese you like, such as mozzarella, pepper jack, or gouda, for a different flavor.
  • Make ahead: You can freeze these muffins for up to a month. To reheat, just microwave for 30-60 seconds or warm them in the oven.
  • Add-ins: Feel free to mix in extras like sautéed onions, bell peppers, or spinach for added veggies.
