Here’s a simple and delicious recipe for the best chicken salad that you can make! It’s creamy, flavorful, and perfect for a light lunch or a picnic.

Best Chicken Salad Recipe

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard (optional for extra tang)
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley or dill, chopped
  • 1/2 cup grapes or apples, chopped (optional for sweetness and crunch)
  • 1/4 cup toasted nuts (e.g., almonds, pecans, or walnuts) (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the chicken: If you haven’t already, cook and chop the chicken into bite-sized pieces or shred it with a fork.
  2. Combine the dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard (if using), lemon juice, salt, and pepper until smooth.
  3. Add the veggies and fruit: To the dressing, add the chopped celery, red onion, grapes or apples (if using), and fresh herbs.
  4. Mix it all together: Add the cooked chicken to the bowl and gently fold everything together until well combined. Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
  5. Optional: For some added texture and flavor, stir in toasted nuts.
  6. Serve: Serve the chicken salad on a bed of greens, in a sandwich, or on crackers for a snack.
