BEST EASY SHEET PAN SCORED POTATOES RECIPE

Here’s a simple yet delicious recipe for Easy Sheet Pan Scored Potatoes that are crispy on the outside, tender on the inside, and packed with flavor!

Ingredients:

  • 8 small to medium russet potatoes (or baby potatoes)
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary (or fresh, chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for extra flavor)

Instructions:

1. Preheat the Oven:

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

2. Prep the Potatoes:

  • Scrub the potatoes well and pat them dry with a towel.
  • Using a sharp knife, carefully score the potatoes by making deep cuts in a crisscross or vertical pattern, ensuring you don’t cut all the way through. The idea is to create “slices” without fully separating the potato pieces.
  • Place the potatoes on the prepared baking sheet.

3. Season the Potatoes:

  • In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, onion powder, salt, and pepper.
  • Drizzle the oil mixture evenly over the scored potatoes, making sure the oil gets into the scored sections. You can use a brush to help spread it evenly.

4. Roast the Potatoes:

  • Roast the potatoes in the preheated oven for 40-45 minutes or until the potatoes are golden and crispy on the outside and tender on the inside. (Check with a fork to ensure they’re soft inside.)

5. Add Final Touches:

  • Optional: For extra flavor, sprinkle some grated Parmesan cheese over the potatoes during the last 5 minutes of roasting and return to the oven to melt.

6. Serve:

  • Once the potatoes are done, remove from the oven and let them cool slightly.
  • Garnish with freshly chopped parsley and serve immediately.

Tips:

  • For extra crispiness: You can pre-boil the potatoes for about 5-7 minutes before scoring and roasting. This will help them cook more evenly and crisp up faster.
  • Flavor variations: Feel free to experiment with other herbs and seasonings like paprika, chili flakes, or fresh garlic.
