Crepes Recipe!

Making crepes is easy and fun, and they can be filled with all kinds of sweet or savory fillings! Here’s a simple, classic crepe recipe:

Classic Crepes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk (whole or any milk of your choice)
  • 2 tbsp melted butter (plus extra for cooking)
  • 1 tbsp sugar (optional, for sweet crepes)
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional, for sweet crepes)

Instructions:

  1. Make the batter:
    • In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar (if using), salt, and vanilla extract (if using).
    • Whisk until the batter is smooth and free of lumps. The consistency should be thin and pourable (similar to heavy cream).
    • Let the batter rest for at least 30 minutes at room temperature. This helps the flour absorb the liquid and results in a smoother texture.
  2. Cook the crepes:
    • Heat a non-stick skillet or crepe pan over medium-high heat. Once it’s hot, add a small amount of butter to coat the surface.
    • Pour about 1/4 cup of batter into the center of the pan. Quickly tilt and swirl the pan to spread the batter into a thin, even layer across the bottom.
    • Cook for 1-2 minutes, until the edges start to lift and the bottom is lightly golden brown.
    • Flip the crepe using a spatula and cook for another 30 seconds to 1 minute on the other side.
  3. Repeat:
    • Continue this process with the remaining batter, adding more butter to the pan as needed to prevent sticking.
    • Stack the crepes on a plate as you make them, and cover them with a clean towel to keep warm.
  4. Serve:
    • Fill your crepes with whatever you like! For sweet crepes, you can add things like Nutella, berries, whipped cream, or powdered sugar. For savory crepes, try filling them with cheese, spinach, ham, mushrooms, or any of your favorite fillings.

Tips:

  • If your batter feels too thick after resting, add a little more milk to thin it out to the right consistency.
  • Crepes are best served immediately, but you can keep them warm by covering them with foil or a kitchen towel.
