Stir-Fried Broccoli and Carrots with Chicken Recipe

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs), cut into thin strips or bite-sized pieces
  • 1 tablespoon olive oil (or vegetable oil)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup carrots, sliced into thin rounds or julienned
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1/2 teaspoon ground ginger)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional for extra depth of flavor)
  • 1 tablespoon honey or brown sugar (optional, for a touch of sweetness)
  • 1 teaspoon rice vinegar (optional, for a bit of tang)
  • 1/4 cup water or chicken broth
  • 1/2 teaspoon sesame oil (optional, for finishing)
  • Sesame seeds (optional, for garnish)
  • Green onions, chopped (optional, for garnish)

Instructions:

  1. Prepare the chicken:
    • Cut the chicken breasts or thighs into thin strips or bite-sized pieces. Season with a pinch of salt and pepper.
  2. Cook the chicken:
    • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
    • Add the chicken to the pan and stir-fry for about 5-7 minutes, until it’s cooked through and lightly browned. Remove the chicken from the skillet and set it aside.
  3. Cook the vegetables:
    • In the same skillet, add a little more oil if necessary, and toss in the sliced carrots and broccoli florets. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp. Add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  4. Add sauce:
    • Return the cooked chicken to the pan. Stir in the soy sauce, oyster sauce (if using), honey, rice vinegar, and water or chicken broth. Cook everything together for another 2-3 minutes, allowing the sauce to coat the chicken and vegetables.
  5. Finish the dish:
    • Once everything is heated through and the sauce has thickened slightly, drizzle with sesame oil (if using) and give it a quick stir.
    • Taste and adjust seasoning with more soy sauce or honey if needed.
  6. Serve:
    • Serve the stir-fried broccoli, carrots, and chicken over steamed rice or noodles. Garnish with sesame seeds and chopped green onions for extra flavor and color.

Tips:

  • Vegetable variations: You can add or swap other veggies like bell peppers, snap peas, or mushrooms.
  • Spicy option: Add a pinch of red pepper flakes or a drizzle of sriracha for a little heat.
  • Make it ahead: You can prep the chicken and vegetables earlier in the day to speed up the cooking process.
