Frozen Tray Dessert Recipe

Ingredients:

  • 1 pack graham crackers (about 12-15 crackers)
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1/4 cup lemon juice (or lime juice for a twist)
  • 1 tsp vanilla extract
  • 1 cup fresh fruit (berries like strawberries, blueberries, or raspberries work great)
  • 1/4 cup melted butter (for the crust)
  • 1/4 cup powdered sugar (for the filling)
  • Optional topping: Whipped cream or extra fruit for garnish

Instructions:

  1. Prepare the crust:
    • Break the graham crackers into small pieces and place them in a food processor. Pulse until they turn into fine crumbs.
    • In a bowl, mix the graham cracker crumbs with melted butter. Stir to combine until the crumbs are moistened.
    • Press the crumb mixture into the bottom of a baking dish or tray (a 9×9-inch dish works well) to form an even crust. Place the tray in the freezer while you prepare the filling to help the crust set.
  2. Make the filling:
    • In a large bowl, use a hand mixer or stand mixer to beat the softened cream cheese until smooth and creamy.
    • Add the sweetened condensed milk and mix well.
    • Pour in the heavy cream, vanilla extract, and lemon juice, then beat everything together until the mixture is light and fluffy (about 3-5 minutes).
    • Stir in the powdered sugar, adjusting the sweetness to your preference.
  3. Assemble the dessert:
    • Take the graham cracker crust out of the freezer. Pour the cream cheese mixture over the crust and spread it out evenly with a spatula.
    • Gently press the fresh fruit into the filling. You can also arrange the fruit on top in a decorative pattern.
  4. Freeze:
    • Cover the tray with plastic wrap or aluminum foil and freeze for at least 4 hours, or until the dessert is firm.
  5. Serve:
    • Before serving, let the dessert sit at room temperature for about 5 minutes to soften slightly for easier slicing.
    • Optionally, garnish with whipped cream or extra fresh fruit for a nice touch.

Tips:

  • Crust variations: You can substitute graham crackers with other cookies like Oreos or digestive biscuits for a different flavor.
