Beef Enchilada Casserole Recipe

Here’s a simple and delicious Beef Enchilada Casserole recipe for you:

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce (you can use red or green)
  • 1 can (4 oz) diced green chilies (optional for extra flavor)
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 8-10 corn tortillas
  • 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1/2 cup sour cream (optional for serving)
  • Chopped cilantro or green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the beef: In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Add the onion and garlic: Once the beef is browned, add the diced onion and garlic to the skillet. Cook for 2-3 minutes until softened.
  4. Season the beef: Stir in the chili powder, cumin, paprika, salt, and pepper. Add the diced tomatoes, black beans, green chilies (if using), and enchilada sauce. Stir to combine and simmer for about 5 minutes to let the flavors meld.
  5. Prepare the casserole layers: Cut the tortillas into halves or quarters so they fit your casserole dish. Spray a 9×13-inch casserole dish with non-stick spray.
  6. Layer the casserole: Start by placing a layer of tortilla pieces on the bottom of the dish. Top with about a third of the beef mixture and then a generous handful of cheese. Repeat the layers, finishing with the remaining beef mixture and cheese on top.
  7. Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Serve: Let the casserole cool for a few minutes before slicing. Serve with a dollop of sour cream and garnish with chopped cilantro or green onions if desired.
