Sweet Potato Rocambole with Minced Meat Recipe

Ingredients:

For the Sweet Potato Layer:

  • 2 medium sweet potatoes, peeled and boiled
  • 1/2 cup grated cheese (such as Parmesan or mozzarella)
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme or rosemary (optional)

For the Minced Meat Filling:

  • 1 lb (450g) minced meat (beef, pork, or a mix of both)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1/2 cup tomato sauce or passata
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/4 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh herbs (parsley or basil), for garnish (optional)

Instructions:

  1. Prepare the Sweet Potato Layer:
    • Boil the peeled sweet potatoes in salted water until soft and tender, about 15-20 minutes.
    • Drain the sweet potatoes and mash them until smooth. Stir in the butter, grated cheese, and seasoning with salt, pepper, and thyme (or rosemary). Set aside to cool slightly.
  2. Cook the Minced Meat Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant, about 3-4 minutes.
    • Add the minced meat to the pan, breaking it up with a spoon as it cooks. Brown the meat until fully cooked, about 6-8 minutes.
    • Stir in the diced bell pepper, tomato sauce, paprika, and cumin. Season with salt and pepper to taste. Simmer the mixture for 5-10 minutes, letting the flavors meld together. Remove from heat and set aside to cool slightly.
  3. Assemble the Rocambole:
    • Preheat your oven to 375°F (190°C).
    • Lay a large piece of parchment paper on a flat surface. Spread the mashed sweet potato mixture evenly on the parchment paper, shaping it into a rectangle (about 12×10 inches).
    • Once the sweet potato layer is spread out, spoon the minced meat mixture evenly over the top of the sweet potatoes, leaving a small border around the edges.
  4. Roll the Rocambole:
    • Carefully roll the sweet potato and minced meat into a tight log (like a jelly roll or Swiss roll), using the parchment paper to help guide the roll without squishing it.
    • Transfer the rolled rocambole to a baking dish, seam side down. If desired, you can brush the top with a bit of melted butter or olive oil for extra color and flavor.
  5. Bake:
    • Bake the rocambole in the preheated oven for about 20-25 minutes, or until the top is slightly golden and the filling is heated through.
  6. Serve:
    • Allow the rocambole to cool for a few minutes before slicing it into rounds.
    • Garnish with fresh herbs like parsley or basil for a fresh touch.
