Garlic Parmesan Crusted Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese (preferably fresh)
  • 1/2 cup panko breadcrumbs (for extra crunch)
  • 1 tablespoon garlic powder
  • 1 teaspoon dried Italian seasoning (or 1 tablespoon fresh chopped herbs like parsley or basil)
  • Salt and pepper, to taste
  • 1/4 cup mayonnaise (or sour cream, for a creamier crust)
  • 1 tablespoon Dijon mustard (optional, for extra flavor)
  • 2 tablespoons olive oil (for drizzling or brushing)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with paper towels to remove excess moisture (this helps the crust adhere better).
    • Season the chicken with salt and pepper on both sides.
  3. Make the Crust:
    • In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, and Italian seasoning. Stir until well mixed.
    • In another small bowl, mix the mayonnaise (or sour cream) with Dijon mustard, if using. This will help the crust stick to the chicken and give it a creamy texture.
  4. Coat the Chicken:
    • Brush a thin layer of the mayonnaise mixture over each chicken breast, making sure to coat it evenly.
    • Press the chicken breasts into the breadcrumb mixture, gently pressing to ensure the crumbs stick to all sides. Make sure the top is well coated with the Parmesan crust.
  5. Bake the Chicken:
    • Place the coated chicken breasts on the prepared baking sheet. Drizzle or brush with a little olive oil for extra crispiness.
    • Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the crust is golden brown and crispy. If you like your crust extra crispy, you can broil it for the last 1-2 minutes of cooking.
  6. Serve:
    • Once the chicken is done, remove it from the oven and let it rest for a couple of minutes.
    • Garnish with freshly chopped parsley, if desired, and serve immediately.
