Baked Bacon, Egg, and Cheese Pinwheels: A Sunday Breakfast Tradition

Here’s a recipe for Baked Bacon, Egg, and Cheese Pinwheels that could become your new Sunday breakfast tradition! These pinwheels are warm, cheesy, and full of crispy bacon—perfect for starting the day off right!

Ingredients:

  • 1 can (8 oz) refrigerated crescent roll dough (or pizza dough for a thicker base)
  • 6 large eggs
  • 6 slices of bacon, cooked and crumbled (or use bacon bits)
  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 2 tbsp milk
  • Salt and pepper, to taste
  • 1 tbsp butter (for greasing the pan)
  • Optional garnish: fresh herbs like chives or parsley

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a baking sheet with butter or line it with parchment paper.
  2. Prepare the dough: Unroll the crescent roll dough and lay it flat on the prepared baking sheet. Pinch the seams together to form a solid sheet of dough. If you’re using pizza dough, roll it out into a rectangle.
  3. Scramble the eggs: In a medium bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper. Heat a non-stick skillet over medium heat, add a little butter, and pour in the egg mixture. Scramble the eggs until fully cooked but still soft, about 3-4 minutes. Set aside to cool slightly.
  4. Assemble the pinwheels:
    • Spread the scrambled eggs evenly over the dough.
    • Sprinkle crumbled bacon and shredded cheese over the eggs. Be sure to distribute everything evenly so each pinwheel will have a nice balance of bacon, egg, and cheese.
  5. Roll and slice: Starting at one edge, carefully roll the dough into a log or cylinder. Once rolled, slice the log into 1-inch thick pinwheels.
  6. Bake: Arrange the pinwheels on the prepared baking sheet, leaving a little space between each one. Bake in the preheated oven for about 12-15 minutes, or until the dough is golden brown and the cheese is melted.
  7. Serve: Once baked, let them cool for a few minutes. Garnish with fresh herbs like chives or parsley, if desired, and serve warm!
