Posted on February 1, 2025

Here’s a super simple and Easy Peasy Banana Bread recipe for when you want something delicious without all the fuss!

Ingredients:

  • 3 ripe bananas (mashed)
  • 1/3 cup melted butter
  • 1 tsp baking soda
  • Pinch of salt
  • 3/4 cup sugar (you can use less for a lighter sweetness)
  • 1 large egg (beaten)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 4×8-inch loaf pan or line it with parchment paper for easy removal.
  2. Mash the Bananas:
    • In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth (a few lumps are fine).
  3. Mix Wet Ingredients:
    • Stir the melted butter into the mashed bananas. Add the beaten egg, vanilla extract, and sugar, mixing until combined.
  4. Add Dry Ingredients:
    • Sprinkle the baking soda and salt over the banana mixture, and stir in until well combined. Gradually add the flour, stirring until just incorporated (don’t over-mix!).
  5. Bake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake for 60-65 minutes, or until a toothpick or knife inserted into the center comes out clean. The top should be golden and slightly cracked.
  6. Cool and Serve:
    • Let the banana bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
    • Slice and enjoy!

This Easy Peasy Banana Bread is quick, moist, and so comforting. Perfect for breakfast, a snack, or dessert!
