Keto Chocolate Chip Cookies

Here’s a recipe for Keto Chocolate Chip Cookies that are low-carb, sugar-free, and deliciously indulgent!

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened cocoa powder (optional, for a richer flavor)
  • 1/4 cup sweetener (erythritol, monk fruit sweetener, or a mix, adjust to taste)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips (Lily’s or similar keto-friendly brand)

Instructions:

  1. Preheat Oven & Prep Baking Sheet:
    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix Dry Ingredients:
    • In a bowl, combine the almond flour, cocoa powder (if using), sweetener, baking soda, and salt. Stir to blend everything evenly.
  3. Cream Butter & Wet Ingredients:
    • In a separate bowl, beat the softened butter and egg together until creamy and smooth.
    • Add the vanilla extract and continue to mix until everything is well combined.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until you get a dough-like consistency.
  5. Fold in the Chocolate Chips:
    • Gently fold the sugar-free chocolate chips into the dough.
  6. Form the Cookies:
    • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball slightly with your fingers or the back of a spoon.
  7. Bake:
    • Bake for 10-12 minutes, or until the edges are slightly golden. The cookies will firm up as they cool, so don’t worry if they look a little soft when you pull them out.
  8. Cool & Serve:
    • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips:

  • Sweetener: You can adjust the amount of sweetener based on your taste. Erythritol tends to be less sweet than monk fruit or stevia, so adjust accordingly.
  • Chocolate Chips: If you prefer, you can also chop up some keto-friendly chocolate bars into chunks for a chunkier cookie!
