Ingredients:
- For the Caramel Filling:
- 1/2 cup heavy cream
- 1/2 cup sugar
- 2 tbsp butter
- 1 tsp vanilla extract
- A pinch of salt
- For the Chocolate Coating:
- 2 cups good quality chocolate (milk, dark, or semi-sweet – your choice)
- 1 tbsp coconut oil or vegetable oil (optional, for a smoother finish)
Instructions:
1. Make the Caramel Filling:
- In a saucepan over medium heat, combine the sugar and butter. Stir until the butter is melted and the sugar begins to melt.
- Once the sugar is fully melted, carefully add the heavy cream (it may bubble up, so be cautious!).
- Stir constantly, and continue to cook for another 2-3 minutes until the caramel thickens.
- Remove from heat, stir in the vanilla extract and salt, then let it cool to room temperature. It should have a nice, gooey consistency.
2. Prepare the Chocolate Coating:
- While the caramel cools, melt the chocolate. You can do this by breaking the chocolate into pieces and melting it in a microwave-safe bowl in 30-second intervals, stirring in between. Alternatively, use a double boiler.
- If you want a smooth, glossy finish, add 1 tablespoon of coconut oil or vegetable oil to the chocolate as it melts.

- Using a chocolate mold (silicone molds work great), spoon a small amount of melted chocolate into the bottom of each mold. Use a brush or the back of a spoon to spread it evenly, covering the bottom and sides.

- Once the base is set, spoon a small amount of caramel into the center of each chocolate mold (be careful not to overfill).
- Top the caramel with more melted chocolate, ensuring it fully covers the caramel.

4. Remove and Serve:
- Once the chocolates have hardened completely, carefully pop them out of the mold.
- Store in an airtight container in the fridge, especially if you’re using a softer caramel.
