Creamy Alfredo Lasagna Soup

Ingredients:

For the Soup:

  • 1 lb ground Italian sausage (or ground turkey for a leaner option)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 2 cups heavy cream
  • 1 (14.5 oz) can crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 8 oz lasagna noodles, broken into thirds (or use small pasta like rotini if preferred)
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese (divided)

For the Creamy Alfredo Sauce:

  • 4 tbsp unsalted butter
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Garnish:

  • Fresh parsley or basil, chopped (optional)

Instructions:

1. Brown the Sausage:

  • In a large pot or Dutch oven, cook the ground sausage over medium heat until browned and crumbled, breaking it apart with a spoon. Remove any excess fat.
  • Add the chopped onion and cook for about 3-4 minutes, until softened.
  • Stir in the minced garlic and cook for 1 more minute until fragrant.

2. Prepare the Soup Base:

  • Add the chicken broth, heavy cream, and crushed tomatoes to the pot with the sausage mixture. Stir to combine.
  • Season with dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a gentle simmer.

3. Cook the Pasta:

  • Stir in the broken lasagna noodles and let the soup simmer for 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally to prevent sticking.

4. Make the Alfredo Sauce:

  • While the soup is simmering, melt the butter in a small saucepan over medium heat.
  • Add the heavy cream and bring to a simmer. Stir constantly for 2-3 minutes, then add the Parmesan cheese and garlic powder. Continue stirring until the cheese is fully melted and the sauce is smooth. Season with salt and pepper to taste.

5. Combine and Finish the Soup:

  • Once the noodles are cooked, pour the creamy Alfredo sauce into the soup pot. Stir to combine everything, making the soup extra creamy.
  • Add mozzarella cheese and Parmesan cheese, stirring until melted and smooth.

6. Serve:

  • Ladle the soup into bowls and garnish with extra shredded mozzarella, fresh parsley, or basil if desired.
