Here’s a simple recipe for Small Salty Cakes (also known as savory cakes or savory scones), which are perfect as a snack, appetizer, or side dish. These little treats are flavored with herbs, cheese, and a touch of salt for a savory delight.

Small Salty Cakes Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt (plus a pinch for topping)
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary or thyme (or fresh if preferred)
  • 1/2 cup grated cheese (cheddar, parmesan, or a blend)
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk (or buttermilk for extra richness)
  • 1 large egg
  • 1 tbsp olive oil (for brushing on top)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and dried herbs.
  3. Cut in the Butter: Add the cold, cubed butter into the dry mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs (a few larger chunks are fine).
  4. Add Cheese: Stir in the grated cheese, mixing evenly.
  5. Make the Dough: In a separate bowl, whisk the egg and milk together. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Be careful not to overmix.
  6. Shape the Cakes: Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Roll it out to about 1-inch thickness. Using a round cutter or a glass, cut out small cakes (about 2-3 inches in diameter).
  7. Bake: Place the cakes on the prepared baking sheet. Brush the tops with olive oil and sprinkle a pinch of salt on each cake for an extra burst of flavor.
  8. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick comes out clean.
  9. Serve: Let the small salty cakes cool slightly before serving. They’re best enjoyed warm, but they’re also tasty at room temperature.
