Banana-Strawberry Cheesecake

A Banana-Strawberry Cheesecake sounds like a delicious and fruity twist on the classic cheesecake! Here’s a simple way to make it:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter

For the filling:

  • 2 cups cream cheese (softened)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas (mashed)
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 3 eggs

For the strawberry topping:

  • 2 cups fresh strawberries (sliced)
  • 1/4 cup sugar (adjust to sweetness)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 325°F (160°C).
    • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press this mixture into the bottom of a springform pan.
    • Bake for 10 minutes, then set aside to cool.
  2. Make the cheesecake filling:
    • In a large mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth.
    • Add the mashed bananas and mix until well incorporated.
    • Add the heavy cream and lemon juice, then beat until combined.
    • Beat in the eggs one at a time, mixing well after each addition. Pour the cheesecake mixture over the cooled crust.
  3. Bake the cheesecake:
    • Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven, crack the oven door, and let the cheesecake cool to room temperature. Then refrigerate for at least 4 hours or overnight to set.
  4. Prepare the strawberry topping:
    • In a saucepan, combine sliced strawberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally.
    • Once the strawberries release their juice, let the mixture simmer for 5-7 minutes. If you want a thicker topping, stir in cornstarch dissolved in a little water.
    • Once thickened (or just simmered to your desired consistency), remove from heat and let cool.
  5. Assemble the cheesecake:
    • Once the cheesecake has set, spread the cooled strawberry topping evenly over the top.
    • Garnish with extra fresh banana slices or strawberries, if desired.
  6. Serve and enjoy!

This banana-strawberry cheesecake will be creamy with a refreshing fruity twist. It’s a perfect dessert for a special occasion or just as a fun treat!
